The Back Story
WHAT YOU NEED
½ cup granulated sugar
½ cup packed light brown sugar
1/3 cup unsalted butter, softened
1 teaspoon pure vanilla extract
1/8 teaspoon salt
1 large organic egg
1 cup unbleached all-purpose flour
1 cup instant oats
½ cup raisins
½ cup walnut pieces
Cooking spray
WHAT TO DO
1. Preheat oven to 350°. Using a mixer, beat sugar, brown sugar, butter, vanilla, salt and eggs at medium speed until light and fluffy.
2. Add flour and oats to egg mixture; beat until blended. Stir in raisins and walnuts. Drop tablespoon size cookie dough 2 inches apart on a baking sheet coated with cooking spray.
3. Bake for 15 minutes or until golden brown. Rest cookies on pan for 3 minutes. Remove cookies from pan and cool on wire racks.
